CeMM Outing 2026: Let's ferment together!

The CeMM Outing 2026 will take place on Friday, 9 October. Following this year’s overall theme of Healthy Aging, we’ll turn our attention to fermentation.

Fermentation has brought people together for thousands of years – to preserve food, experiment with flavors, share knowledge, and create something delicious together. During our hands-on workshop, we’ll dive into the history and significance of this traditional method, learn how fermentation works, and, of course, get busy ourselves: chopping, slicing, seasoning, and fermenting a variety of vegetables. After a few days of fermentation, everyone will be able to take home some of what we’ve prepared together.

We’ll start the day with plenty of hands-on activities and a healthy breakfast before taking a walk together to the Heuriger for lunch, the traditional introduction of our new PhD students, and a relaxed afternoon together.

Please note: As a scientific introduction to the topic, our Scientific Director Maria Rescigno will share some of the latest research on fermentation and gut health on Thursday, 8 October 2026, at 9:00 am in the Large Seminar Room. This will provide the scientific foundation for our hands-on activities on Friday, when she will also share some practical tips.
